The effect of microwaves on lipid stability has also been investigated. The hydrolysis of triglycerides has been
studied in soya, egg yolk and meats. Fatty acid stability has been studied in meat, chicken fat, beef tallow, bacon fat, rainbow trout and peanut oil. The peroxidation of polyunsaturated fatty acids, which generates rancidity, has been studied in meat, egg yolk and chicken.
The conclusion is that microwave cooking does not induce more chemical modifications in fats than do
conventional cooking methods. In particular, microwave cooking does not generate free radicals because, compared with conventional treatments, it does not result in more lipid oxidation.
